I love how filling it is and I love that every member of my family loves it across the board. The problem with Potato Cheese soup is that it is extremely high in calories. I don’t know about you but I enjoy things more when I do not have to feel guilty about eating it. This desire to eat without guilt motivated me to put a lower calorie spin on my favorite soup. I think I figured it out so please give it a try and let me know!</span></span></div>

<div><strong>Ingredients Needed:</strong></div>
<ul>
<li> 1 medium onion, Diced</li>
<li>2 whole Carrots, peeled and diced</li>
<li>3 stalks Celery, Diced</li>
<li>1 Tbs unsalted butter and 1 Tbs olive oil</li>
<li>6 whole Russet Potatoes, peeled and diced</li>
<li>6 cups Organic Low Sodium Chicken</li>
<li>3 Tbs All-purpose Flour</li>
<li>1 cup Milk</li>
<li>1/4 cup Heavy Cream</li>
<li>1/2 tsp coarse kosher salt</li>
<li>1/4 tsp coarse black pepper</li>
<li>1/2 tsp cajun seasoning</li>
<li>2 cups sharp cheddar cheese</li>
<li>6 strips “real” bacon, cooked and chopped</li>

<p> In a large soup pot warm butter and oil. Add the onions, carrots, and celery. Cook veggies until tender and then add the diced potatoes. Add spices and cook covered on low for 10 minutes.</p>

<p>Pour in the broth and bring it to a gentle boil, cooking 10 minutes, or until the potatoes are starting to get tender. Whisk together the flour and the milk and pour into the soup allowing soup to cook for another 5 minutes.</p>
<p>Remove half the soup and blend in a blender/food process until smooth (Be VERY careful here. The soup is extremely hot and it can cause the top of the blender to pop off splattering hot soup all over you. This may have happened to me before ;)&#8230;..) Pour it back into the soup pot and stir to combine. Stir in cream and grated cheddar cheese.</p>

<p>Serve in bowls garnished with grated cheese and crisp bacon pieces. You probably will need to top with a little salt and pepper to taste.</p>

<p>So why is this soup lower in calories??</p>
<ul>
<li>Most potato cheese soups start with cooking the bacon in the soup pot first and reserving some of the bacon grease to cook the veggies. I just used a little bit of butter an olive oil. I still love bacon with this soup so I use it as a garnish instead.</li>
<li>Most potato cheese soups call for at least 1 cup of heavy cream. I use the blending the soup method, thickened milk, and a little bit of cream.</li>

The great thing about buying a whole chicken is that it allows you to have chicken for a few meals throughout the week. Even though I do buy those precooked chickens at the market on occasion I regularly make my own at home. They are so easy and you end up with the same results if not tastier. I thought I would post my roast chicken recipe to help y’all out!</p></div></div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">One whole roasting chicken (remove gizzards and neck from inside chicken, this is an easy step and not disgusting. Just reach inside the bird and pull out the five or so unmentionables and dump them in the trash. They are not attached just sitting in the bird.)</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">1/4 cup olive oil</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">1 tbsp coarse sea salt</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1 tbsp crushed black pepper</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1 tbsp garlic powder</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients"></li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">Rub additives:</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">2 tbsp honey (for a sweeter skin)</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">1 tbsp maple syrup (for a sweeter skin)</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">1-2 tbsp paprika (richer flavor)</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Preheat oven to 375’. </li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Place chicken in a 13x9 glass casserole dish (If you have a roaster that is even better). </li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Mix oil, salt, pepper, and garlic powder. </li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Generously coat chicken on all sides with oil mixture. </li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Bake at 350 for 45min to 1 hour or until internal temperature reaches at least 165 degrees and the juices run clear. </li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Let chicken rest for 10-15 min before carving to allow juices to settle and remain in the bird. </li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">If you have a convection oven cook at 325’ for 35-45 minutes.</li></ol><div class="zl-linkback" >Schema/Recipe SEO Data Markup by <a title="ZipList Recipe Plugin" alt="ZipList Recipe Plugin" href="http://www.ziplist.com/recipe_plugin" target="_blank">ZipList Recipe Plugin</a></div><div class="ziplist-recipe-plugin" style="display: none;">2.2</div><a id="zl-printed-permalink" href="https://rnforwellness.com/2011/05/whole-oven-roasted-chicken/"title="Permalink to Recipe">https://rnforwellness.com/2011/05/whole-oven-roasted-chicken/</a></div></div>
