It is a simple vegetarian option if needed during the week or add on some healthy lean meat. I have found that clean pizza crusts are hard to come by so I have a no fail whole wheat pizza crust that your whole family will love. It is obviously more time consuming to make your own crust so I make a few at a time and freeze them for when I need them on a Wednesday after a full work day, soccer, and shuttling the family around. Included with the pizza crust recipe I am also going to include two of my favorite pizza recipes.<br />

Makes 2 crusts<br />
<strong>Prep time: 2 hours</strong></p>
<ul>
<li>1 tsp granulated cane sugar</li>
<li>1 1/2 cups warm water</li>
<li>1 T. active dry yeast (I like the packets, they insure freshness every time)</li>
<li>1 T. olive oil</li>
<li>1 tsp salt</li>
<li>2 1/2 cups whole wheat flour</li>
<li>1 cup all purpose white flour</li>
</ul>
<p>In a large bowl dissolve sugar in warm water. Sprinkle yeast over the top of sugar water and let stand <strong>10 minutes</strong>, until sugar water is foamy. Stir the olive oil and salt into the yeast mixture, then stir in 2 cups whole wheat flour and 1 cup all purpose flour. Dough will begin to form. Knead until all the flour has been absorbed and your ball of dough is smooth. Place dough ball into a large oiled bowl turning to coat the surface of the dough ball with oil. Cover bowl loosely with a towel and let stand on your counter until dough ball is doubled in size, approx. <strong>1 hour.</strong></p>
<p>When doubled, tip onto lightly floured surface and divide in to two pieces. Form into two balls and place balls into two oiled bowls, cover with towel and let rise an additional <strong>45 minutes</strong> until both dough balls are again doubled in size. Once doubled, dough balls are ready to be formed in to two pizza crusts. Pizza crusts will bake in the oven at 425’ after toppings placed.</p>
<p>If not using crusts and they need to be frozen, form into desired pizza crusts, cover with wax paper, and wrap well. Freeze up to three months for freshness.</p>
<p><strong>BBQ Chicken Pizza</strong><br />
Serves 4</p>
<ul>
<li>Olive oil spray</li>
<li>1 whole wheat pizza crust</li>
<li>1/2 cup tomato sauce</li>
<li>3/4 cup bbq sauce</li>
<li>2 cups mozzarella cheese, grated</li>
<li>1 cup cooked chicken breasts, sliced</li>
<li>1/4 cup red onion, thinly sliced</li>
<li>1/4 cup cilantro, chopped</li>
</ul>
<p>Preheat oven to 425’<br />
Spray your pizza pan with olive oil spray to help prevent sticking and assist with browning. Place uncooked whole wheat pizza crust on prepared pizza pan. In a small bowl combine tomato sauce and bbq sauce, mix well. In a separate bowl add sliced chicken breasts and 2 T. of the prepared tomato bbq sauce, toss to coat. Take remaining bbq sauce mix and spread on pizza crust, leaving 1 1/2 inches around the edge. Layer pizza with mozzarella cheese, chicken, red onion, and cilantro. Place in the oven and bake 15-20min until crust is browned and cheese is bubbly.</p>
<p><strong>Mediterranean Chicken Pizza</strong><br />
Serves 4</p>
<ul>
<li>Olive oil spray</li>
<li>1 whole wheat pizza crust</li>
<li>3/4 cup pesto sauce</li>
<li>1 cup cooked chicken breast, sliced</li>
<li>1 cup mozzarella cheese, grated</li>
<li>1/4 cup red onion, thinly sliced</li>
<li>1/4 cup black or Kalamata olives, sliced</li>
<li>1/4 cup marinated artichoke hearts, chopped</li>
<li>1/2 cup crumbled feta cheese</li>
</ul>
<p>Preheat oven to 425’<br />
Spray your pizza pan with olive oil spray to help prevent sticking and assist with browning. Place uncooked whole wheat pizza crust on prepared pizza pan. Spread 1/2 cup pesto sauce on pizza crust. In a medium bowl add sliced chicken breasts and 1/4 cup pesto sauce, toss to coat. Next apply mozzarella cheese, red onion, pesto chicken, olives, and artichokes to pesto prepared pizza crust. Sprinkle the top of pizza with feta cheese. Bake 15-20 minutes until crust and feta is golden brown.</p>
<ul>
<li>For vegetarian option omit the chicken.</li>
</ul>

Once links are cooking add 1/4c water, cover and reduce heat to medium. Cook until sausage is no longer pink. Remove from pan and slice. 			</p></div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">3 boneless skinless chicken breasts, boiled and shredded</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">1 can (28oz) Salsa Verde Enchilada sauce</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">1 can (4oz) diced green chilies</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1 can (15.5oz) black beans, drained</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1/2c red onion, diced</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">2 cups sharp cheddar cheese, grated</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">1/2 cup shredded mozzarella cheese</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">1 cup crumbled feta cheese</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">12 small corn tortillas</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">Salt and Pepper to taste</li><li id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients"></li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Heat oven to 350’. </li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Coat the bottom of a 13x9 casserole dish with a little of the green enchilada sauce. </li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Set aside. </li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">In a large mixing bowl add shredded chicken, green chilies, black beans, onion, 1/4 cup of the enchilada sauce. </li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Stir to coat the chicken. </li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">In a small mixing bowl combine the sharp and mozzarella cheese. </li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Now begin the layering process: </li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">1st layer-4 corn tortillas, 1/3 of the shredded chicken mixture, 1/3 of the cheese mix, and 1/3 of the feta cheese. </li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">2nd layer- 4 corn tortillas, green enchilada sauce to coat the tortillas, chicken mixture, cheese mixture, and then feta.</li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">3rd layer- repeat layer #2 ending with feta cheese and salt and pepper to taste. </li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">(I put a little more enchilada sauce on the 3rd layer to keep the casserole moist.)</li><li id="zlrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">Bake for 25-30 minutes at 350’ until casserole is bubbly and cheese is browned. </li><li id="zlrecipe-instruction-12" class="instruction" itemprop="recipeInstructions">Let stand for 5-10 minutes to set before serving. </li><li id="zlrecipe-instruction-13" class="instruction" itemprop="recipeInstructions">Serve with shredded lettuce and diced tomatoes.</li></ol><div class="zl-linkback" >Schema/Recipe SEO Data Markup by <a title="ZipList Recipe Plugin" alt="ZipList Recipe Plugin" href="http://www.ziplist.com/recipe_plugin" target="_blank">ZipList Recipe Plugin</a></div><div class="ziplist-recipe-plugin" style="display: none;">2.2</div><a id="zl-printed-permalink" href="https://rnforwellness.com/2011/07/249/"title="Permalink to Recipe">https://rnforwellness.com/2011/07/249/</a></div></div>

Add enough breadcrumbs to bind the mixture so they can be formed into cakes. </li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Refrigerate the mixture until ready to cook.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Heat a large skillet over medium-high heat and add olive oil. </li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Heat until oil shimmers. </li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Shape crab into 7-8 (1in thick) cakes. </li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Add formed cakes to heated oil and drop heat to medium. </li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Cook cakes turning once until golden brown. Place in the refrigerator to chill.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Once chicken is cooked and shredded add 1 cup Stubb’s BBQ sauce, mix well to coat shredded chicken. </li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Set aside.</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">In a medium bowl add cabbage and broccoli salad, toss. </li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Add sour cream dressing and mix well to coat the cabbage. </li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Layer whole wheat buns with a little more BBQ sauce, shredded BBQ chicken, and coleslaw. I decided that I needed to come up with a clean eating version that my kids love and that I am happy to let them eat. I will make a big batch and freeze the leftovers. Super easy midweek quick meal.</p><p class="summary italic">
Instead of serving with catsup I suggest serving with marinara sauce for dipping or my homemade ranch dressing. (refer to the condiments section of the website for marinara and ranch recipes)</p><p class="summary italic">To freeze let fish sticks cool completely then wrap in wax paper and place in a freezer bag. To reheat, place in a 400’ oven on a wire rack and heat through. About 10-12 minutes.
</p></div></div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">6 cod or tilapia fillets cut into strips</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">1 cup plain yogurt</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">2 tbsp organic dijon mustard</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1/2 teaspoon fine sea salt</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1/4 teaspoon freshly ground black pepper</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">2 tsp garlic powder</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">3 egg whites, beaten</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">1 cup grated Parmesan</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">2 tbsp dried parsley</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">1 cup seasoned whole wheat bread crumbs</li><li id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients">Olive oil, for drizzling</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">For the Fish Sticks:</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Preheat the oven to 450’. </li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Line a cookie sheet with aluminum foil and place a wire rack on top. </li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Brush wire rack with olive oil.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Rinse the fish and pat dry with paper towels. </li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">In a medium bowl whip together yogurt, mustard, salt, pepper, garlic powder, and egg whites. Submerge fish into yogurt mixture.</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Let sit for 20 minutes to marinate.
