Clean Eating Grocery List

These are things I keep on hand so I always have something available for lunch and dinner.

Prep Time: 15 minutes

Cook Time: 30 minutes

Yield: 24 muffins

Ingredients

  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 1/4 cups buttermilk
  • 2 egg whites, lightly beaten
  • 1/3 cup vegetable oil
  • 1/2 cup honey
  • 1 cup blueberries, fresh or frozen
  • organic cane sugar and cinnamon for sprinkling

Instructions

  1. Preheat oven to 350.
  2. Coat 12 muffin cups with cooking spray or cupcake liners.
  3. Mix together all ingredients starting with dry to wet ingredients.
  4. Pour into muffin cups, sprinkle with cane sugar and cinnamon.
  5. Bake for 25-30 minutes or until .
