Chicken Fajitas

Yield: Serves 4-6

One of Doug’s favorite things to eat is fajitas. Before changing to our clean eating lifestyle I used to season my fajitas with a Lawry’s seasoning packet. Not any more and surprise Doug loves these more!

Serve with warm corn tortillas, sour cream, cheese, and avocado!

Ingredients

  • 3 boneless, skinless chicken breasts, sliced into strips
  • 2 organic red bell peppers, seeded and sliced
  • 1 organic green bell pepper, seeded and sliced
  • 1 medium yellow onion, sliced
  • 1 small can diced green chilies
  • 2 tbsp olive oil
  • 1 tbsp cumin
  • 1 tbsp garlic powder
  • 1 tbsp, red pepper powder
  • 1 tbsp black pepper
  • 2 tsp salt
  • 1 cup chili verde salsa

Instructions

  1. Add 2 tbsp olive oil to large saute pan.
  2. Add peppers and onions and saute until tender.
  3. Remove veggies from pan and add chicken.
  4. Add all spices and green chilies and saute chicken until cooked through.
  5. Return cooked veggies to the pan and the 1 cup chili verde salsa.
  6. Stir well coating chicken and veggies with salsa.
  7. Reduce heat to low, cover and simmer 10 minutes.
