No Bake Blueberry Chocolate Chip Cheesecake

Blueberry Chocolate Chip Cheesecake

Prep Time: 45 minutes

Cook Time: 8 hours

Yield: Serves 8-10

This recipe is my spin on the no bake cheesecake. Any fresh berry will work. Avoid frozen berries due to the excess liquid.


  • The Crust:
  • 1 1/2 cups New Morning Organic graham cracker crumbs (About 1 pkg)
  • 1/3 cup packed dark brown sugar
  • 1 tsp cinnamon
  • 1/3 cup organic unsalted butter, melted
  • The Cheesecake:
  • 16oz soft cream cheese
  • 2 tsp lemon juice
  • 2 cup whipping cream
  • 4 1/2 cups fresh organic blueberries
  • 1 tbsp agave syrup
  • 1/3 cup organic evaporated care sugar
  • 1 1/4 cup semi-sweet chocolate chips


  1. Combine graham cracker crumbs, brown sugar, and cinnamon.
  2. Stir in melted butter.
  3. Press into a 10 in springform pan.
  4. Chill in the refrigerator while you make cream cheese mixture.
  5. In a large mixing bowl, mix softened cream cheese and lemon juice.
  6. In a food processor add 4 cups fresh blueberries and 1 tbsp agave syrup.
  7. Puree until mixed, thickened, Blueberry mixture will still be chunky.
  8. Add whipping cream to cream cheese mixture, whip until thickened.
  9. Pour in blueberry mixture and 1/3 cup cane sugar.
  10. Continue to mix until stiff. Fold in 1 cup semi-sweet chocolate chips.
  11. Pour thickened cream cheese mixture over chilled graham cracker crust.
  12. Top with 1/2 cup fresh blueberries and 1/4 cup chocolate chips.
  13. Chill for several hours or overnight.
  14. Remove sides of spring form pan before serving.
