Broccoli and Zucchini Alfredo Pasta

Yield: Serves 6

Broccoli and Zucchini Alfredo Pasta

Since we try to keep things as unprocessed as possible I had to come up with an easy way to do Alfredo sauce because we love it in this house! I used to buy the jar Alfredo but not anymore.

Ingredients

  • 4 cups medium shell whole wheat pasta (cook as directed, drain and set aside)
  • 2 zucchini, chopped
  • 2 cups fresh broccoli
  • 1/2c onion, diced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • salt/pepper to taste
  • Alfredo Sauce
  • 2 tbsp unsalted butter
  • 2 tbsp whole wheat flour
  • 1 cup whipping cream
  • 1 cup 2% milk
  • 2 cups freshly grated parmesan cheese
  • 1 tsp garlic powder
  • salt/pepper to taste

Instructions

  1. Combine olive oil, zucchini, broccoli, onion, garlic, and salt and pepper to saute pan.
  2. Cook on medium until veggies are tender.
  3. In a sauce pan melt butter.
  4. Add flour and stir until thick paste forms.
  5. Stir in cream and milk, whisking until thickened, about 5-8 minutes.
  6. Once thickened add cheese, garlic, salt and pepper.
  7. Stir until smooth (If you do not have heavy whipping cream you can use 2 cups milk).
  8. Pour cheese sauce over broccoli mixture and mix well.
  9. Simmer on low 10 minutes.
  10. Add cooked pasta and stir to coat.
