Since we try to keep things as unprocessed as possible I had to come up with an easy way to do Alfredo sauce because we love it in this house! I used to buy the jar Alfredo but not anymore.
Ingredients
- 4 cups medium shell whole wheat pasta (cook as directed, drain and set aside)
- 2 zucchini, chopped
- 2 cups fresh broccoli
- 1/2c onion, diced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- salt/pepper to taste
- Alfredo Sauce
- 2 tbsp unsalted butter
- 2 tbsp whole wheat flour
- 1 cup whipping cream
- 1 cup 2% milk
- 2 cups freshly grated parmesan cheese
- 1 tsp garlic powder
- salt/pepper to taste
Instructions
- Combine olive oil, zucchini, broccoli, onion, garlic, and salt and pepper to saute pan.
- Cook on medium until veggies are tender.
- In a sauce pan melt butter.
- Add flour and stir until thick paste forms.
- Stir in cream and milk, whisking until thickened, about 5-8 minutes.
- Once thickened add cheese, garlic, salt and pepper.
- Stir until smooth (If you do not have heavy whipping cream you can use 2 cups milk).
- Pour cheese sauce over broccoli mixture and mix well.
- Simmer on low 10 minutes.
- Add cooked pasta and stir to coat.
