Cranberry Spinach Salad
- 1 pound organic fresh spinach, chopped
- 3/4 cup toasted walnuts, chopped
- 1/2 cup blue cheese, crumbled
- 1/2 red onion, sliced
- Cranberry vinaigrette
- Combine spinach, walnuts, blue cheese, and red onions.
- Toss salad with cranberry vinaigrette.
- Add dressing 3T. at a time so as not to over coat the spinach.
